GLUTEN FREE PEACH COBBLER

Peach cobbler is the official cobbler of Texas, and we can understand why if you've ever been to the Parker County Peach Festival - so seasonal, fresh and delish - this variation is lighter witha crunch! Recipe and photo courtesy of Twist of Lemons.

Ingredients

Filling

  • 5-6 peaches

  • 1/3 cup local honey

  • 1 tsp vanilla extract

  • 1 tbsp cinnamon

  • optional: 2 tbsp arrowroot starch (to create a thicker consistency)

Topping

  • 2 cups oats

  • 1 cup almond flour

  • 1/2 cup coconut flakes

  • 1/2 cup coconut sugar

  • 1/4 cup coconut oil

  • 2 tbsp almond butter

  • 1 tsp vanilla extract

  • 1 tbsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp ground ginger

 

 

Instructions

  1. Slice peaches and place in 9×9 glass plate. Add and mix honey, vanilla extract, cinnamon, and optional arrowroot starch.

  2. Place oats, almond flour, cinnamon, coconut sugar, coconut flakes, nutmeg, and ground ginger in a bowl.

  3. Combine coconut oil, almond butter, and vanilla extract and heat until smooth.

  4. Pour mixture over oats and mix all together.

  5. Pour oat mixture over peaches. Should be slightly crumbly.
