Nothing says weekend breakfast like pancakes. These paleo pancakes offer all the comfort of, well… regular pancakes, without any processed ingredients, sweeteners, grains or dairy. Recipe and photo courtesy of Rachel Devaux, foodie behind Rachael Good Eats.


  • 1/2 banana

  • 1/2 c unsweetened almond milk

  • 1 pasture-raised egg

  • 1/2 tsp vanilla

  • 2 scoops Vital Proteins collagen peptides or 1 scoop vanilla protein powder (here's our fave)

  • 1/2 tsp cinnamon

  • 1/3 cup cassava flour or sub coconut flour

  • 2 tbsp ground flaxseed

  • 1/2 tsp baking powder

  • Optional: if batter is too liquidy add 1 tbsp coconut flour


  1. Combine all ingredients in a blender to blend for 1 minute.

  2. Heat pan on medium-low then spray with coconut oil.

  3. Drop batter (about 1/3 cup) in pan and turn the heat on low to let cook 3-4 minutes each side.

  4. Garnish with your fave fruit and nut toppings and enjoy!
